Sharing just the browser tab works fine and avoids exposing anything else on your desktop.

Can remote participants add their own names to the list?

Not directly inside a shared screen — one person controls the entry list, so collect names in chat first, then paste them in.

Will the sound effect play for everyone on the call?

Only if you're sharing system audio along with your screen; otherwise only you will hear it locally.
